Wild boar medallions with foxes

Cut the meat into slices about 1.5 cm thick, season with salt and pepper. In a pan with oil, sear them on both sides, with each side being in the pan for about 2 minutes.

Ingredients (what you need)

boneless and fat-free rolled pork loin
a handful of foxes
3 sprigs of thyme
1-2 teaspoons of red pepper (if you don't like whole pepper in food, you can crush it in a mortar)
100 ml of broth
100 ml of cream
salt and pepper
oil

Recipe steps

Cut the meat into slices about 1.5 cm wide and then season it with salt and pepper.

In a pan with oil, fry it on both sides, which takes about 2 minutes on each side. We can do it for a shorter time if we prefer it to remain pink inside.

Remove the meat and keep it warm.

Pour a little broth into the pan and let the browned bits release from the bottom of the pan.

Mix the ingredients and add the chanterelles, which can be cut into smaller pieces or left whole, along with thyme and red pepper.

Gradually add the broth, letting it nearly reduce each time, and sauté and simmer the chanterelles for about 10 minutes.

Season them and add the cream.

Reduce the sauce to the desired thickness.

Taste it. If you wish, you can add the meat to the sauce at the end to warm it up.
