400 g spaghetti
200 g bacon
6 egg yolks
80 g Parmesan
salt
pepper
Recipe steps
For 4 servings, pour 4 liters of water into a large pot. Add salt to the water, bring it to a boil, and cook the pasta according to the instructions on the package.
Meanwhile, cut the bacon and sauté it in a pan for about 5 minutes until golden. Grate the cheese finely.
Separate the yolks from the whites and mix them with about ¾ of the cheese.
Once the pasta timer goes off, do not drain the pasta as you normally would, but carefully transfer it to the pan with tongs or a slotted spoon. The water that clings to the pasta will beautifully help the final consistency of the spaghetti. Do not pour out the water from the pot yet.
In the pan with the bacon and spaghetti, which you still have on the heat and is still warm, pour in the yolks with the cheese and mix everything well. Pepper to taste before serving.
