Pancake Recipe can definitely be very healthy. This is the case if you use buckwheat, spelt, and rye flour instead of regular, commercially processed flour in the pancake batter. This pancake recipe also does not require regular milk, sugar, or eggs. They are thus very easily digestible, not demanding on the body, and thanks to the whole grain flours, full of valuable minerals. And if you want a pancake recipe that is gluten-free, simply use only buckwheat flour. By using the aroma and taste of coriander and turmeric, you can give the pancake recipe a different dimension that you might fall in love with permanently. You can top, fill or flavor it in any way you can think of first or last. It really doesn’t matter. The pancake recipe can handle almost everything. For this type of pancakes, however, try using sugar-free jams to keep with their theme - sweet but healthy. If you don’t have a jam that doesn’t contain sugar, simply cook dried fruit with water and then blend it. We believe you will manage this, and we wish you bon appétit!

Ingredients (what you need)

1 cup (100 g) buckwheat flour
1/2 cup (50 g) rye flour
1/2 cup (50 g) spelt whole grain flour
1 tablespoon olive oil
1/2 liter soy milk (or other)
pinch coriander
pinch turmeric
salt
sugar-free jam or preserves

Recipe steps

First, mix the dry ingredients, namely flour, salt, and spices. Then gradually add the soy milk (or any other type you have chosen to use) slowly. Mix thoroughly and let it sit for about 20 minutes.

Then fry and fry. Pour a little oil into a non-stick pan, let it heat up, and fry beautiful thin pancakes. Treat the first one as a test to achieve the right thickness. You can be sparing with the oil, as the batter already contains oil that helps during frying.

You should be able to make about 6 pancakes from the batter, which you can then flavor and garnish according to your preferences.
