This recipe for burrito is with pork tenderloin and avocado salsa, which is a combination that we enjoy.

Ingredients (what you need)

2 sprigs coriander
juice of 1 lime
1 avocado
salt and pepper
450 g pork tenderloin
2 tablespoons sunflower oil
2 small onions
2 cloves garlic
2 green peppers
1 tablespoon chili
80 g grated Gouda
tortillas

Recipe steps

First, for the salsa, we rinse the limes and squeeze out their juice. We finely chop the rinsed cilantro. The inside of the avocado is cut into cubes and then, together with the cilantro and lime juice, we put it in a bowl and mash it well with a fork. We salt to taste.

Then we peel the garlic and onion. The garlic is cut into thin slices and the onion into cubes. The washed bell pepper is cut into strips, without seeds.

We cut the meat, washed under cold water, into strips. We fry it quickly in hot oil, for about 4 minutes. Then add the prepared onion, garlic, and bell pepper to the pan. We cook together for another 2 minutes. Season everything with salt, pepper, and chili seasoning. Finally, add the grated Gouda cheese. Set the pan aside.

Finally, we warm the tortillas in the oven, fill them with that great mixture from the pan and the salsa, and wrap them up tightly.
