Both flours are mixed with peas, salt, and xanthan, then we add oil and gradually pour in water until a firmer, non-sticky dough is formed. From the dough...

Ingredients (what you need)

150 g pumpkin seed flour (Adveni Medical)
250 g gluten-free all-purpose flour (Doves Farm white gluten-free)
2 tablespoons Hraška
1 teaspoon salt
1/2 teaspoon xanthan
1 tablespoon oil
360-380 ml water

about 100 g smoked salmon

1 package of Sojakrém spread (or 100 g of another dairy-free spread resembling cream cheese)
200 ml plant-based milk
1 tablespoon nutritional yeast (Tebi)
salt

Recipe steps

Mix both flours with peas, salt, and xanthan, then add oil and gradually pour in water until a firmer non-sticky dough forms. Take pieces the size of a chestnut from the dough and shape them into gnocchi.

Place the gnocchi into boiling salted water to which you add a tablespoon of oil and a teaspoon of baking soda to prevent sticking. Stir occasionally until they start to boil. Once they detach from the bottom and float to the surface, cook them for another 3-4 minutes. Then drain and serve.

Cut the smoked salmon into small pieces and briefly sauté them in a dry pan.

Heat the cheese spread together with plant milk until it starts to boil, stirring continuously until the ingredients combine. Add salt to taste if needed. For a more intense flavor, you can add a tablespoon of nutritional yeast. Place a portion of gnocchi on a plate, sprinkle with the sautéed salmon, and pour the sauce over it.
