Nut roll
This recipe is very popular in the author's family. Give it a try, it might catch on in your home as well. The roll is fluffy and with whipped cream, it’s like a little cloud.
Ingredients (what you need)
8-9 egg whites (1/4 l of egg whites)
250 g granulated sugar
150 g all-purpose flour
100 g walnuts
1 packet of vanilla sugar
1/2 baking powder
1 pinch of salt
1 tablespoon powdered sugar for dusting the dough
500 ml whipping cream
Recipe steps
In a bowl, we put the egg whites with a pinch of salt and beat them for about 2 minutes until foamy. Then we add half of the sugar and continue beating until the egg whites are well combined with the sugar and thicken.
Then we add the rest of the sugar and continue beating for about 2 minutes until the egg whites with sugar are whipped stiff. We check this by turning the bowl with the egg whites upside down, and if the meringue stays in place, we add the sifted flour with baking powder and nuts to the whipped egg whites. It's best to first mix the sifted flour with the baking powder and nuts together in one bowl to combine all the dry ingredients.
Mix everything well and evenly spread the batter on a baking sheet lined with parchment paper. We smooth it out and, using a sieve, sprinkle the entire surface of the batter with powdered sugar, which we first scoop with a tablespoon.
We place it in a preheated oven at 170 °C in the hot air mode. We bake until golden for about 12 minutes. Everyone should respect the specifics of their oven.
Let the baked sheet cool. Small cracks may appear on it, but that is not a problem.
We whip the cream to a stiff consistency and spread it on the cooled base from which we have removed the paper, and then we roll it up. Let it cool.
We cut the roll into thicker pieces about 4 cm in size. We sprinkle with sugar and serve.
