Apple-filled pastries

After a hearty lunch, it's nice to have something sweet. Puff pastries with apple filling scented with cinnamon will be the perfect choice.
Ingredients (what you need)
For the dough
300 g all-purpose flour
125 ml milk
200 g butter (or Hery)
2 egg yolks
20 g yeast
2 teaspoons sugar
1 pinch of salt
Apple filling
5 larger apples
1 slice of butter
1 whole cinnamon stick
ground cinnamon (to taste)
sugar (to taste)
egg for brushing
Recipe steps
We peel the apples and grate them coarsely.
In a pan, we melt the butter. We add the chopped apples, whole cinnamon stick, and sugar mixed with ground cinnamon to taste. We sauté everything together until the apples are soft and the mixture thickens. Then we remove the whole cinnamon stick and let it cool.
From the mentioned ingredients, we create a dough that we will not let rise. If the given amount of flour makes it sticky, we add flour until we achieve a smooth and workable dough.
After preparing the dough, we immediately roll it out and cut out squares, onto which we place the apple filling and fold them into little pockets.
Before baking, we brush the pockets with beaten egg and let them rest for another half an hour.
We bake in a preheated oven at 180 °C for about 20 minutes.
