A quick and tasty bundt cake, which is juicy thanks to the addition of carrots, giving the batter a softness and interesting texture. The egg white meringue then beautifully brightens the cake.

Ingredients (what you need)

3 eggs
1 cup of sugar
2 cups of all-purpose flour
1/2 cup of oil
1/2 cup of milk
1 baking powder
1 vanilla sugar
4 cups of grated carrots
For greasing and dusting the pan
fat
coarse flour

Recipe steps

Grease the bundt pan with fat and sprinkle it with coarse flour. Preheat the oven to 180 °C.

Separate the eggs into yolks and whites. Whip the egg whites until stiff peaks form.

In a larger bowl, mix both sweeteners, add the egg yolks, and whisk into a foam. Then add the oil, milk, and mix everything thoroughly.

Weigh the flour, add the baking powder, and mix well.

Gradually add the flour mixture to the whipped egg yolks and mix thoroughly. Then add the coarsely grated carrot.

Finally, gently fold the whipped egg whites into the carrot batter.

Pour the finished batter into the prepared bundt pan and bake at 180 °C for about 30 to 40 minutes. To check if the bundt cake is baked, use a toothpick, which should come out dry.
