Ingredients (what you need)
500 g rhubarb
50 g granulated sugar
100 ml water
For the dough
200 g butter
200 g powdered sugar
3 eggs
1 baking powder
1 pinch of salt
380 g all-purpose flour
For the crumble
50 g butter
80 g powdered sugar
1 vanilla sugar
80 g semolina flour
Additionally
20 g almond slices

Recipe steps
We wash the rhubarb and cut it into pieces. In a pot, we heat water with sugar and add the rhubarb, which we cook for about 3 minutes.
From butter, sugar, and eggs, we prepare a dough, gradually mixing in flour combined with baking powder and a pinch of salt. The dough is slightly sticky.
We line a baking tray with parchment paper and press the dough onto it using damp hands. We preheat the oven to 180 °C.
We can spread jam on the dough, or we can also add cherries soaked in rum. Alternatively, we can use only the rhubarb itself.
In a bowl, we combine butter with semi-coarse flour, powdered sugar, and vanilla sugar, and we knead everything by hand until we obtain a crumble.
We sprinkle the crumble and almonds over the rhubarb and bake for about 40 minutes.
