Potato Bundt Cake

We boil the potatoes in their skins, let them cool down, and then grate them. We add all the other ingredients and finally fold in the beaten egg whites. We bake in a moderately heated oven.
Ingredients (what you need)
250 g of cooked potatoes
3 eggs - egg whites beaten to stiff peaks
250 g of coarse flour
1 baking powder
130 g of melted fat (butter, Hera)
130 g of sugar (I use less)
1 vanilla sugar
a tablespoon of lemon juice, or a bit of zest
raisins or nuts - optional
Recipe steps
We boil the potatoes in their skins and, after cooling, we grate them.
We mix in the other ingredients and finally gently fold in the whipped egg whites.
We bake in an oven preheated to about 160°C for approximately 45 minutes. This portion is suitable for a game meat loaf pan or a smaller bundt cake.
