Dough
4 eggs
220 g sugar
vanilla sugar
250 ml milk
225 ml oil
100 ml lemon juice
2 teaspoons lemon zest
400 g all-purpose flour
baking powder
1 teaspoon baking soda
2 tablespoons cocoa
Cream
3 egg whites
30 g granulated sugar
1 tablespoon jam
1/2 teaspoon citric acid
a little food coloring
For the syrup
100 g granulated sugar
a little water
Recipe steps
Whisk the eggs with sugar, then add milk, oil, lemon juice, grated lemon zest, flour, baking powder, and baking soda.
Pour the first half of the batter into a greased baking tray, while mixing the second half with cocoa and pouring it over the light batter.
Bake for twenty minutes at a temperature of 180 to 200 degrees Celsius. Then let it cool.
Cream: Pour water over the sugar just enough to cover it slightly. While constantly stirring, boil vigorously until the mixture starts to stretch, then remove from heat.
In a bowl, place the egg whites, sugar, jam, citric acid dissolved in water, and a little yellow coloring.
Beat the egg whites. While continuously mixing, add the hot syrup to the beaten egg whites.
After whipping, spread it over the cooled cake and sprinkle with cocoa.
