Ingredients (what you need)

70 g white buckwheat flour (fine)
110 g fine spelt flour
3× eggs
500 ml semi-skimmed milk
salt
FOR THE FILLING
4× medium-sized apples
2 tablespoons butter
1 tablespoon honey
2 teaspoons ground cinnamon

Recipe steps

First, in a large bowl, mix buckwheat flour and spelt flour, eggs, milk, and a little salt. Then let the dough rest for 10 minutes.

Meanwhile, for the filling, wash the apples, remove the cores, and cut the apples into pieces. In a suitable pan, heat 2 tablespoons of butter and sauté the apples for about 5 minutes over medium heat.

Turn off the heat, add honey, and sprinkle with cinnamon. Stir thoroughly.

Take a second pan (non-stick) and fry the pancakes gradually over medium heat to your liking. You should be able to make about 10 pancakes from the batter.

While still warm, fill the pancakes with apples and serve.
