Grandma's Paradise

Tomato sauce made from pickled tomatoes.
Ingredients (what you need)
4 teaspoons thyme
1 jar pickled tomatoes
3 tablespoons plain flour
1 piece tomato puree
1 piece onion
4 berries whole black pepper
4 berries allspice
3 tablespoons lard
1 carton cooking cream
10 cubes sugar
2 pieces bay leaves
to taste salt

Recipe steps
Peel and drain the pickled tomatoes. Keep the brine from the tomatoes. The tomatoes can be pickled either homemade or bought.
In a deeper pot, heat lard and add 10 teaspoons of sugar to it. Stir until caramel forms. Then add the tomatoes and mix. Be prepared that as soon as you add them, they will splatter. So, cover it right away.
After a while of cooking, add finely chopped onion, thyme, allspice, whole pepper, and bay leaf. Cover and simmer until everything is soft. Gradually add the brine from the tomatoes. After the tomatoes have softened, remove the spices and blend everything, preferably with an immersion blender. Add tomato purée and season with vinegar, sugar, and salt. If you’re using sweet-sour brine from homemade pickled tomatoes, seasoning may not be necessary. In the cream, dissolve a little flour and add it last to Grandmother's tomato sauce. Adjust seasoning if needed.
Serve with bread dumplings and meat, or stuffed peppers, as we are accustomed to.
