Ingredients (what you need)

kitchen twine for tying meat
800 g boneless pork roast
1 large tablespoon lard
1 tablespoon butter
2 onions
2 cloves garlic
pinch whole cumin
2 tablespoons plain flour
salt

Recipe steps

In the first step, season the pork all over with salt and then rub it with oil. Tie it with kitchen twine into a firm and neat roll. Heat up a pan and sear the meat on all sides. It will seal and the pork roast will remain nice and juicy. Set it aside on a plate.

In the pan, add the onion sliced into half-moons and the garlic roughly chopped. Sauté for 3 minutes.

Then transfer the vegetables to a baking dish, pour a little water into the pan to release the browned bits from the bottom, and add those to the baking dish as well. Place the meat on top and roast in a preheated oven at 150 degrees Celsius for 5 minutes, then reduce the temperature to 120 degrees and roast for 1 hour.

Remove the cooked meat from the oven and the baking dish. Add a little butter to the meat drippings and simmer for 10 minutes, until the excess water evaporates.

On a plate, then pour the sauce over the sliced pork roast and serve.
