Ingredients (what you need)

Sponge Cake
150 g powdered sugar
4 eggs
7 tablespoons of all-purpose flour
12 g baking powder
150 ml oil
7 tablespoons of milk
jam (preferably sour) for spreading on the sponge
Additionally
fat for greasing
coarse flour for dusting
Cream
400 ml milk
4 tablespoons of all-purpose flour
250 g margarine (or butter)
1 vanilla sugar
150 g powdered sugar
a bit of rum
3 tablespoons of coconut
For topping
100 g grated coconut
a bit of cocoa
seasonal fruit (optional)
mint (optional)

Recipe steps

Grease the baking tray with oil and sprinkle it with coarse flour.

Whisk the sugar and eggs into a froth. Then add the flour mixed with baking powder, oil, and milk. Mix everything thoroughly and pour it onto the prepared baking tray.

Place it in a preheated oven and bake at 160 °C for about 20 minutes. Turn it over, let it cool, and spread a thin layer of jam on top.

We make the cream by cooking a thick mixture from milk and flour. Let it cool, and then whip it with margarine or butter. Add sugar, rum, and finally coconut.

Spread the cream over the jam-covered sponge and sprinkle it with coconut. Gently press the coconut into the cream so it does not fall off.

After cooling, cut into cubes and serve on a plate sprinkled with cocoa (previously dip the pieces in cocoa) and garnish with seasonal fruit and a mint leaf, or optionally a Raffaello ball. The fruit and mint are not necessary, but they make the dish look and taste better.
