50 ml rum
250 g butter

First, we soak the raisins in rum and let them absorb for about an hour. To prepare the dough, we beat the softened butter with half of the sugar and the egg yolks until fluffy.
From the egg whites and the remaining sugar, we whip a stiff snow. We mix the flour with the baking powder and gradually fold both mixtures gently into the egg yolk mixture. We pour the prepared dough into a greased and floured baking dish with high edges.
We smooth the dough and place halved apricots on top, with the hollow side facing up. We mix the raisins soaked in rum with honey and use a teaspoon to place them into the hollows of the apricots.
We bake the apricot and honey raisin cake at 180°C for about 40 minutes. After baking, we let the cake cool, sprinkle it with powdered sugar, and cut it into squares. Then we can serve it.
