Ingredients (what you need)
300 g gluten-free all-purpose flour (Doves Farm self-raising)
80 g sugar
1 baking powder (+1 teaspoon extra if not using self-raising flour)
1 tablespoon psyllium
lemon and orange zest
1 handful of raisins
1 handful of candied fruit (cherries)
1 handful of almonds
200 g silken tofu
40 g oil
water as needed
For decoration
dairy-free fat (Stella, Alsan)
rum
powdered sugar
Recipe steps
We pour the psyllium into a cup, add water, and let it swell. We gradually add water as needed; the swelling takes about ten minutes and should result in a gel-like consistency similar to egg whites.
We thoroughly blend or mash the tofu with a fork until we achieve a smooth consistency similar to fine cottage cheese. It is ideal to use silken tofu, but regular supermarket tofu will also do.
We mix the flour with sugar, baking powder, and grated citrus zest. We add the soaked psyllium, mashed tofu, and oil. If necessary, we add water and mix the dough, which should be thick enough to shape. Finally, we mix in the raisins, candied fruit, and chopped almonds.
We line a baking tray with parchment paper and form a stollen on it. Ideally, we should roll and fold the dough, but for gluten-free dough, it is enough to transfer it with a spoon and shape it so that it looks like a folded stollen, having one side higher and the other lower. Of course, we can choose any other shape at our discretion.
We place the tray in an oven preheated to 160 °C, where we also have a cup of water, and bake for about 30-40 minutes (times may vary by oven; we test for doneness with a skewer). Once the stollen is baked, we immediately transfer it to a kitchen rack so it doesn't steam and sink.
While hot, we brush it with melted vegetable fat mixed with rum and generously sprinkle it with powdered sugar.
