Zucchini cakes with plum jam

300 g all-purpose flour
150 g zucchini
2 egg yolks
100 ml milk
1/2 cube of fresh yeast
2 tablespoons mayonnaise
2 tablespoons sugar
50 ml oil
1 teaspoon rum
salt
lemon zest

Recipe steps
We cover the baking tray with parchment paper. We turn on the oven to preheat to 190-200 °C.
First, we peel and grate the zucchini. We lightly salt it and let it sit in a strainer to release excess water. Then we thoroughly squeeze it out, ideally using a cloth.
In the warm milk, we add a bit of sugar and yeast and let it make a starter. We mix the zucchini, oil, starter, and other ingredients into the sifted flour.
First, we prepare a smooth dough, and then we use a spoon to scoop out pieces, which we place on a floured surface. We create small balls like when filling pastries and connect them on the tray.
We season the jam with cinnamon and vanilla sugar. Using a small glass, we create a dent and brush it with beaten egg. Then we fill the dent with the flavored jam and place almonds on top.
We place the tray in the oven and bake at 190-200 °C for about 15 minutes.
