From the fridge or freezer, we take out the fat and grate it into the sifted flour. We pinch it together by hand, then mix it with the yolk, vinegar, and ice water. We work everything into a dough by hand again, wrap it in foil, and put it in the fridge to rest for a few hours.

Ingredients (what you need)

dough 1 pcs egg yolk
35 dkg all-purpose flour
1 tablespoon vinegar
25 dkg shortening
1 dl cold water
for brushing fat
1 pcs egg
filling 45 dkg granulated sugar
7 pcs egg white

Recipe steps

After removing from the refrigerator, roll it out and cut into strips about 2cm wide. Take metal tubes, grease them with fat, and wrap the dough strips around them so that they do not overlap. Now brush them with beaten egg and place them on a greased baking sheet. Put them in a preheated oven at 250°C and bake for about 15 minutes.

Meanwhile, prepare the meringue filling by beating the egg whites in a hot water bath while gradually adding sugar.

Let the kremrole cool down and remove the metal tubes. Fill them with the prepared filling.

From this batch, you will make about 20 kremrole, and the filling will almost double.
