Cherry sponge cake

Use fruit that is currently in season. If you have pickled cherries, you can use those as well.

Ingredients (what you need)

300 g semi-coarse flour
1 tsp baking powder
6 pcs eggs
300 g granulated sugar
100 ml oil
to taste 500 - 750 g cherries
as needed flour for dusting
oil for greasing

Recipe steps

We crack the eggs and separate the yolks from the whites. We then whip the whites into a foam and gradually fold in the yolks with sugar. Next, we carefully mix in the baking powder, oil, and flour.

We grease a baking tray, sprinkle it with flour, spread the batter on it, and place the cherries on top. We put it in the oven at 180°C and bake for about 20 minutes until golden.

After taking it out, we let it cool a bit and can serve it immediately cut into pieces.
