Ingredients (what you need)

800 ml water
2 kg beef (neck or forequarter)
2 kg pork shoulder (boneless)
6 kg pork belly (skinless, boneless)
favorite spices
1 pack pork casings
Recipe steps
First, we will go to the butcher for quality meat. We will prepare two containers.
On the cutting board, we will cut the beef and salt it. We will do the same with the pork. Now the meat will rest (it needs to mature) at a temperature of 5 - 7°C. For 3 days.
After the time has passed, we will grind 1 kg of pork belly on the fine plate of the grinder. We will do the same with 2 kg of beef.
We will grind the remaining meat on the grinder with a coarse plate (16 mm).
To the finely ground meat, we will add water mixed with our favorite spices.
Now we will add the meat that we have already ground on the coarse plate.
We will mix the ingredients and knead them. We will stuff them into casings. Then we will smoke at 70°C. We will smoke for about 5-6 hours. After that, we can just enjoy the delicious homemade sausages. Nearly 8 kg of tasty sausages.
