Ingredients (what you need)

50 g mustard seeds
2 teaspoons of sugar
1/4 teaspoon of salt
2-4 teaspoons of oil
60-70 ml of 8% vinegar
60-70 ml of water

Recipe steps

Grind the mustard seeds into a fine powder - I used an electric coffee grinder that I have exclusively for these purposes, such as grinding seeds or chopping hard grains for bread dough.

Bring the water with vinegar to a boil and pour it hot over the seeds.

Add oil, salt, and sugar to the mixture, mix everything thoroughly, and taste. You can adjust the amount of salt and sugar to your liking.

After cooling, place it in the fridge, where the mustard will naturally thicken.

Fresh mustard has a strong vinegar smell, which diminishes both the taste and the aroma when chilled.
