Ingredients (what you need)

1 zucchini
2 tomatoes
1 eggplant
spring onions
3 cloves of garlic
100g ham
100g Black Forest ham
100g mozzarella
red basil pesto (see photo)
fresh basil
fresh parsley
broth
200g couscous
egg
salt

Recipe steps

Slice the zucchinis and tomatoes into pieces about 1 cm thick, lightly salt them, and fry in a pan on both sides. Then remove them and spread the crushed garlic on the zucchinis.

In the pan, sauté the spring onions, then add diced eggplant, ham, and chopped garlic. Salt it and finally stir in the red pesto.

Pour in the couscous, cover it with boiling broth, stir, then remove from the heat and cover.

After the liquid has been absorbed, add the chopped basil and parsley, then let the mixture cool. Adjust the salt and season to taste. Then stir in the eggs into the cooled mixture.

Place half of the zucchini slices at the bottom of a baking dish, then add the tomatoes, mozzarella, and the couscous mixture. Pack everything down well and add more tomatoes, zucchini, and finally a layer of mozzarella.

Put it in the preheated oven at 200 °C and bake.
