Because the vegetable risotto recipe in the Czech version is more granular. The difference is that the ingredients are mixed at the end of cooking. The vegetable risotto recipe contains plenty of fiber and vitamins thanks to the used vegetables, so you do something good for your health. You can use vegetable risotto as a main course or as a delicious side dish. Moreover, this recipe is easy to prepare, so vegetable risotto is also great for a quick dinner.

Ingredients (what you need)

250 g rice
2 tablespoons oil
1 piece onion
400 g frozen vegetables with corn and peas
1 tablespoon soy sauce
1/2 teaspoon sweet ground paprika
salt, pepper to taste
hard cheese
pickled cucumber

Recipe steps

Bring lightly salted water to a boil and cook rice according to the package instructions.

In heated oil, sauté finely chopped onion. Then add frozen vegetables, briefly sauté, and add a little water.

Cover and simmer until tender, adding more water and stirring as needed. Once the vegetables are soft, mix in salt, pepper, paprika, and soy sauce. Everything should be to your taste. Finally, stir in the rice and heat through.

Serve the vegetable risotto with pickled cucumbers and sprinkled with grated cheese.
