Ingredients (what you need)

600 g young zucchini
200 g carrots
150 g celery
200 g hard cheese (Edam, Gouda)
300 g smoked sausage (sausage, smoked meat)
100 ml baby semolina
100 ml breadcrumbs
50 ml oil
1 baking powder
3 eggs
3 larger cloves of garlic
1 larger onion
2 handfuls of scallion tops
2 teaspoons crushed cumin
1 tablespoon dried marjoram
salt
ground pepper
2 tablespoons fresh lovage
fat for greasing the baking sheet
semolina (breadcrumbs) for dusting the baking sheet

Recipe steps

We carefully wash the zucchini, grate it coarsely, lightly salt it, stir, and let it sit for 10 minutes to release its juice. Then we thoroughly squeeze out the resulting liquid.

We clean the carrot and celery and grate them together with cheese and sausage on a coarse grater. We finely grate the garlic and chop the onion into small pieces. We mix all these ingredients with the zucchini, add the remaining ingredients, and mix everything thoroughly again.

We preheat the oven to 180 °C.

We transfer the mixture to a greased and floured baking dish and place it in the preheated oven, where we bake for about 40-50 minutes, until it turns golden brown. We check for doneness with a toothpick; if the batter does not stick to the toothpick, it is ready. It can be served warm or cold.
