1 eggplant with firm skin
2-3 tablespoons of olive oil

2 larger cloves of garlic

1 tablespoon of soy sauce
1 pinch of brown sugar (or a bit of honey)

salt
a little oil for brushing the grill or pan
Recipe steps
Prepare the marinade by mixing olive oil, balsamic vinegar, soy sauce, crushed garlic, chopped herbs, and capers. Mix everything thoroughly and add a little sugar or honey to taste.
Cut the eggplant into slices about 0.5-1 cm thick. Lightly brush it with oil and place it on the grill or a grilling pan. Grill on both sides and salt only at the end. Keep in mind that the marinade contains soy sauce, which is also salty, so season carefully.
Brush the grilled eggplant slices with the marinade on both sides. You can serve them immediately or store them in a sealed container in the fridge. They will keep fresh for several days.
