120 g of rice
350 g of zucchini
5 medium-sized champignons
1 small onion
vegetable broth (or chicken)
olive oil
1 pinch of salt
ground pepper
1-2 cloves of garlic
basil
parsley
chives
parmesan (for sprinkling)
Recipe steps
In oil, sauté the finely chopped onion, add the rinsed rice, and roast it for a while. Then, add broth as needed and simmer until the rice is soft.
Meanwhile, in oil, sauté the sliced mushrooms until they are almost soft, adding salt.
Next, stir in the grated zucchini, crushed garlic, pepper, and salt.
Cook for a while longer to keep the zucchini tender.
Add herbs of your choice and mix them with the rice.
Place grated Parmesan on a plate and serve.
