Fried zucchini

1-2 eggs
bread crumbs (as needed)

Recipe steps
Slice the pattypan squash into thin slices, peel it, and sprinkle with salt. Place it on a strainer and let it stand to remove excess water. You can leave it like this for up to half an hour.
Then, coat each slice in a breadcrumb mixture and fry them in hot oil until they turn golden brown.
After frying, place them on a paper napkin to drain the excess fat. It is best served with potatoes.
