Sun-dried tomatoes in oil

We can make this recipe if we have a fruit dryer at home.

to taste herbs (basil, rosemary, chili pepper)
as needed firmer ripe tomato
olive oil

Slice the tomatoes and spread them on the trays in the dehydrator, then dry them according to the dehydrator's instructions.
Place the dried tomatoes into a jar, packing them in to about 2/3 full, and fill to the brim with olive oil. Close the jar as tightly as possible and let it sit. The tomatoes absorb the oil after a few days. Let them store for a month or more.
You can enhance the flavor of the marinated tomatoes by adding herbs and spices to your liking. In that case, alternate the dried tomatoes with your favorite herb (basil, thyme, rosemary, or chili pepper, and sliced garlic) and again fill with olive oil.
This way, you can create several varieties of marinated tomatoes at once.
