Ingredients (what you need)
250 g wild garlic
1 tablespoon butter or finely chopped bacon
1 small shallot
salt
pepper, ground

1 beaten egg
2 tablespoons sour cream
Recipe steps
Peel the shallot and chop it into small pieces. Cut the wild garlic into thin strips.
In a pot, melt the butter (or use bacon) in which we sauté the shallot until it turns golden brown.
Add the wild garlic, season with salt and pepper, then mix everything well and briefly simmer covered, for about 10 minutes. There is no need to add water, the garlic will release enough of its own juice. If there is too much liquid, uncover the pot and let it evaporate.
We can prepare the spinach with wild garlic according to our own preferences. We can add an egg, which we let set while constantly stirring, or we can sauté the wild garlic with whipping cream right at the beginning, uncovering the pot after a while to allow the liquid to reduce. Another great option is to stir in sour cream at room temperature into the spinach at the end.
Serve with potatoes and a fried egg or fried sausage, dumplings of your choice, and with roasted or smoked meat.
