Ingredients (what you need)
1 small onion
1 carrot
1 slice of celery
1/2 parsley
1 piece of cabbage (Brussels sprouts can also be used)
a few florets of cauliflower
1 piece of kohlrabi
green peas
corn
salt
3 black peppercorns
pasta (gluten-free letters for soup)
green parsley
2 l of water
Recipe steps
We thoroughly wash all the vegetable ingredients and cut them into smaller pieces. We only peel the onion and cut it in half.
We add water, lightly salt, bring to a boil, and simmer covered for about 20 minutes.
Meanwhile, in a pot, we cook the pasta – either noodles or letters. We add them to the boiling salted water and cook them until soft while stirring occasionally (according to the manufacturer's instructions). Noodles usually need just a few minutes, while letters require a longer cooking time.
Then we remove the peppercorns and the onion, add the drained noodles or letters, chopped fresh parsley, and salt to taste if needed.
