Red lentil soup with curry

We'll quickly make a great soup from red lentils, carrots, and tomato paste. Indian spices give it a wonderful aroma and an interesting light flavor.
Ingredients (what you need)
1 onion
1 carrot
2 cloves of garlic
1 teaspoon of curry
1/4 teaspoon of ground cumin
1/2 cup of red lentils
salt
ground pepper
bay leaf
750 ml of vegetable broth (or water)
3 tablespoons of tomato paste (or a small can of peeled tomatoes)
3 tablespoons of oil
Recipe steps
In oil, we sauté the peeled and finely chopped onion until it softens. Then we add the diced or sliced carrots, chopped garlic, lentils, curry spices, and ground cumin. We sauté everything thoroughly for 2-3 minutes.
We pour in the vegetable broth, add tomatoes and bay leaf, bring to a boil, and simmer on low heat for about 25 minutes.
Next, we season with salt and pepper, and we can blend the mixture, but not to a completely smooth consistency.
