Ingredients (what you need)
8 large tomatoes
1 smaller cucumber
1 smaller red onion
1 red bell pepper
2 tablespoons fresh basil or oregano, chopped into smaller pieces
2 cloves garlic, grated or minced
2 tablespoons olive oil
2 tablespoons vinegar
2 tablespoons tomato paste
1 teaspoon sugar or to taste
salt
pepper
1-2 cups cold water
Recipe steps
We peel the tomatoes and cucumbers and cut them into small pieces. We chop the onion into small cubes. We also dice the bell pepper.
We put all the ingredients except for the water into the blender and blend them well. Finally, we add water to achieve the desired consistency of the soup.
We let the soup cool for at least one hour, but it tastes best if we let it rest overnight.
