Ingredients (what you need)
750 g onions
80 g butter (or lard)
1 l meat broth (or bone broth)
90 ml white wine (optional)
1/2 baguette (or white bread)
2 tablespoons butter (for toasting the bread)
150 g grated cheese (to taste)
1 bay leaf
1-2 teaspoons herbes de Provence
salt
ground pepper
Recipe steps
Peel the onion and slice it into rings.
Fry the onion rings briefly in butter, cover with a lid, and let them simmer for about 10-15 minutes.
Then remove the lid and let the onion caramelize. Stir occasionally and roast until it turns golden brown. This process takes about 20-30 minutes, but you can leave it longer depending on the color. Properly caramelized onion will give the soup a beautiful color and sweeter taste.
First, deglaze the onion with wine and after a while add broth. Season with salt and pepper, and add Provençal herbs and bay leaf. Simmer for about 15 minutes.
Toast pieces of baguette or white bread in butter until golden. Then generously sprinkle cheese on them in the pan and let it sit for a while to melt the cheese.
You can also place the baguette with cheese in a preheated oven for a while to melt the cheese beautifully.
Transfer the soup into bowls, add a slice of baguette on top, and sprinkle with grated cheese.
