4 l water
2 kg beef ribs, brisket, and marrow bones
1 onion
100 g root parsley
100 g celery
100 g carrot
2 cloves garlic
parsley leaves
allspice
whole pepper
bay leaves
Recipe steps
Put the meat and bones into a pot with cold water and bring it to a gentle boil. The water should simmer, not boil vigorously. Once the proteins and fat rise to the surface, skim them off with a spoon to make the broth clearer. The whole process takes 2–4 hours.
An hour to an hour and a half before the end, add the halved onion with the skin (the skin adds color to the broth), peeled and chopped celery, peeled garlic, and diced carrots and parsley. Also add the spices and herbs to the pot.
Strain the finished beef broth. Shred the meat and return it to the broth. Remove the vegetables and place them in a container, not back in the broth, as they could spoil more quickly. Part of it goes to the freezer for later cooking, and part can be served right away, for example, with liver dumplings or celestial noodles.
