Old Czech beef soup

In a larger pot, we place all the ingredients, including the cleaned vegetables, washed bones (preferably lean, marrow bones will make the soup fatty), and meat. We pour in cold water and cover it, then let it simmer very gently for about 2.5 hours. It should not boil too much. We do not skim the foam.

2 - 3 pcs beef bones
1 pc only peeled onion
1 sprig celery leaves
250 g parsley
2 - 3 sprigs parsley leaves

500 g beef rib
1 tablespoon salt
1 sprig lovage
150 g carrot
5 whole allspice berries
250 g celery
10 whole black peppercorns
1 clove garlic

Recipe steps
After we take the soup off the stove, we let it stand for about 15 minutes. We remove the vegetables and cut them into pieces. We strain the rest and add separately cooked noodles, diced vegetables, and chopped cooked meat into the strained soup.
Finally, we add chopped parsley and chives. If we feel like it, we can add liver dumplings.
