Ingredients (what you need)
5 pcs medium-sized leek
1 pc egg
2 cubes broth cube
salt
ground pepper
2-3 tbsp all-purpose flour
butter
3 tbsp oil
Recipe steps
We clean the leeks, cut off the wilted parts, slice them lengthwise, rinse them, and chop them finely.
In a pot, we heat oil with butter, add flour, and lightly roast until golden. Then we pour in cold water, add the stock cube, and bring to a boil. Once the soup is boiling, we add the leeks and cook for 15 minutes until soft. We season with salt and pepper. Those who like can add cream for a smoother texture.
We remove the boiling soup from the heat, crack in the eggs and whisk them with a fork, and finally add finely chopped parsley.
