Ingredients (what you need)
4 carrots
2 tablespoons of light homemade roux (butter and flour)
2 tablespoons of butter
250 ml of 12% cream
1 liter of vegetable broth
4 potatoes
salt
ground black pepper
ground nutmeg
a little cream for serving
Recipe steps
Thoroughly wash the carrots, peel them, and grate them on a coarse grater. Wash the potatoes, peel them, and cut them into small cubes.
In a pan, melt the butter and add the grated carrots, which we sauté over low heat for about 10 minutes.
Once they are sautéed, pour in hot broth and add salt. Add the potatoes and let them cook over low heat.
Toast the flour in butter and create a light roux.
When the potatoes are almost soft, add the light roux to the soup for thickening, then add the cream and let it simmer for about 20 minutes.
During cooking, season the soup with pepper and a bit of nutmeg to taste. If necessary, add salt.
Serve the soup immediately and garnish it with cream on the plate.
