Summer, refreshing cucumber gazpacho

Gazpacho is a cold salad made from fresh vegetable ingredients, originating from Andalusia in Spain. It is served chilled, either as a soup or as a thicker mixture.
Ingredients (what you need)
1 cucumber
1 green chili pepper
1 bunch of spring onions
1 clove of garlic
1 ripe avocado
1-2 tablespoons of lime juice
salt (to taste)
freshly ground pepper
2 tablespoons of sour cream
For garnish
6 hazelnuts or almonds
a few pink peppercorns
olive oil for drizzling
a few basil leaves (or dill)
Recipe steps
We wash the vegetables, dry them, and cut them into small pieces. We put the cucumber, bell pepper, green onions, and garlic into a blender or food processor and blend well.
We add salt, pepper, lime juice, one half of the avocado, sour cream, and mix everything together a few times. We drizzle lime juice over the other half of the avocado with the pit and set it aside for later serving.
Next, we strain the mixture through a sieve into plates or bowls and then let it cool for at least 1-2 hours.
For each serving, we add diced pieces from the other half of the avocado, sprinkle with chopped nuts, and add a few pink peppercorns. We drizzle with quality olive oil and garnish with green leaves of basil, dill, or similar herbs.
