1 cauliflower
1 l vegetable broth (as needed)
1 cream for whipping
2-3 tablespoons of semi-coarse flour
1 pinch of nutmeg
1 handful of fresh green parsley
white pepper, ground
salt
Recipe steps
Divide the cauliflower into small florets and rinse them thoroughly.
Place the florets in hot vegetable broth and cook them for about 15 minutes until they are tender.
Then thoroughly mash the cauliflower in the soup or pass it through a sieve.
Mix half of the cream with flour and, while stirring constantly, pour it into the soup.
Cook for a little while longer. Finally, add white pepper, salt, and grated nutmeg.
Mix the remaining cream with finely chopped green parsley and just before serving, decorate each portion of the soup with elegant dollops.
