Spring Potato Soup

Ingredients (what you need)
3-4 potatoes
1 tablespoon butter
1 tablespoon all-purpose flour
1 tablespoon spelt flour
1 small teaspoon caraway seeds
1 handful of sorrel leaves
1 bunch of wild garlic
lovage
parsley
100 ml cream
vegetable broth
salt
Recipe steps
From heated butter and flour, we prepare a roux, which we thin with vegetable broth while constantly stirring, mix well, and bring to a boil.
In a pot, we put peeled potatoes cut into cubes and caraway seeds and cook until soft.
We finely chop the leaves of garlic and sorrel, mix them with lovage, and add to the soup, which we cook briefly.
At the end, we smooth the resulting mixture with cream, optionally add more salt, and stir in chopped parsley.
