Brussels Sprout Soup

Autumn smoked soup with mushrooms, Brussels sprouts, and other vegetables is very nutritious and satisfying. It could also serve as a standalone main dish.
Ingredients (what you need)
20 g dried mushrooms
2 onions
400 g potatoes
200 g carrots
800 g Brussels sprouts
300 g tomatoes
1 tablespoon butter
800 g smoked meat
1 l smoked broth
a few peppercorns
3 allspice berries
2 bay leaves
salt
ground pepper
2 tablespoons chopped parsley
Recipe steps
We will put the mushrooms in water to soak. We chop the onion into small pieces.
We clean the potatoes and cut them into small pieces. We peel the carrot and grate it on a coarse grater.
We make a cross cut on the tomatoes and pour boiling water over them. We let them sit for a while and then gently peel off the skin. We cut the tomato in half and scoop out the seeds with a spoon, then we chop the flesh into small pieces.
In a pan, we melt the butter and sauté the onion in it. We cut the meat into larger pieces and brown it in the butter. Then we add the potatoes and pour in the broth.
We squeeze out the excess water from the mushrooms, chop them into smaller pieces, and place them in the pot. We add peppercorns, pimento, and bay leaf. We cook for about 15 minutes.
Then we add the carrot and cabbage and cook until they are soft, another 15 minutes.
We take the meat out of the soup and cut it into small pieces. We then return the meat along with the tomatoes to the soup and cook for about 5 more minutes. We season the soup with salt and pepper and finally remove the pimento and bay leaf.
