Ingredients (what you need)
250 g root vegetables (carrot, celery, parsley)
500 g asparagus
30 g plain flour
salt
sugar
250 ml sweet cream
1-2 fresh egg yolks
roll (for croutons)
chives (for decoration)
Recipe steps
We wash the vegetables, clean them, immerse them in water, salt them, and make a strong broth.
We wash the asparagus, peel it, and cut the tips to about 3 cm. We set the tips aside. We finely grind the rest of the asparagus in a meat grinder and then cook it in the soup along with the juice that remains after grinding.
We strain the broth and cook the asparagus heads in it. In one part of the cooled broth, we dissolve the flour, then return it to the soup and cook. We salt and sweeten the soup to taste.
We remove the soup from the heat and add cream mixed with beaten egg yolks. We will not cook it further. We serve the soup with toasted bread croutons and sprinkle with chopped chives.
