Ingredients (what you need)
350 g fresh mushrooms
2 potatoes
3 spring onions
30 g butter
1 tablespoon plain flour
700 ml vegetable broth (as needed)
150 ml cooking cream 12%
soup seasoning
caraway seeds
white pepper
salt
Recipe steps
Carefully wash the mushrooms, clean them, and slice them thinly.
Peel the potatoes, wash them, and cut them into small pieces.
Wash the spring onions and cut them into rings, separating the white and green parts.
Melt the butter in a pan and gently sauté the white part of the onion.
Add the cleaned mushrooms and sauté everything well.
Finally, add the plain flour and toast it until pink.
Pour in the broth and stir in the chopped potatoes with caraway seeds.
Cook over medium heat for about 20 minutes. Season the soup with salt, pepper, and soup spices.
Finally, enrich the soup with cream, which we only heat. Serve it warm, garnished with the green part of the spring onions.
