Ingredients (what you need)
3/4 kg tripe
1 onion
sweet ground paprika
1 pinch of hot paprika
marjoram
1 teaspoon of garlic paste
lard (or oil)
roux
salt
ground pepper
Recipe steps
Tripe is thoroughly rinsed, placed in a pot, water is added, and it is boiled without salt until it becomes tender. This process takes approximately 3 hours.
In a pan, we heat lard or oil, in which we sauté chopped onions. Then we add garlic paste, sweet and hot paprika, and let the aroma release. It is important to remember to add water immediately after the paprika has released its fragrance, otherwise the paprika may become bitter.
The cooked tripe is chopped and added to the pot with onions and paprika. We bring it to a boil, add a roux, season with salt and pepper, and cook for about half an hour, stirring occasionally.
Before finishing the cooking, we season the dish with marjoram, which we gently warm in our hands.
