Ingredients (what you need)
Boiled meat
500-600 g beef
1.3 l water
salt
2 bay leaves
3 allspice berries
6 whole peppercorns
100 g root vegetables (carrot, celery, parsnip)
40 g onion
Sauce
50 g oil
80 g all-purpose flour
200 g tomato puree
1 bay leaf
5 cloves
2 allspice berries
1 medium-sized whole cinnamon stick
salt
35-40 g sugar (or to taste)
Recipe steps
First, we cook the meat. The best way to do this is in a pressure cooker. We add the meat to boiling salted water, then add all the spices and cleaned vegetables. We cook until the meat is tender.
We take out the meat, filter the broth, and keep it for making the sauce.
In a pot with a sturdy bottom, we pour in oil, add flour, and create a light roux. While constantly stirring with a whisk, we gradually pour in about 1 liter of broth.
We add all the spices, and as soon as we start cooking, we stir in the tomato paste and add the remaining broth as needed to achieve the desired consistency of the sauce. If necessary, and if we don't have broth, we can dilute the sauce with a bit of water.
Once we reach a boil, we reduce the heat and let the sauce simmer for about 25 minutes, stirring occasionally.
During cooking, we season with salt as needed, depending on the saltiness of the broth, and sweeten to taste. Everyone has different preferences, so we add the sugar gradually.
Finally, we strain the sauce or otherwise remove the spices.
We slice the meat against the grain and serve it with the sauce and bread dumplings or with pasta.
