We will boil two yolks, which we then mash and mix with two raw yolks. We add pepper, mustard, and slowly pour in olive oil while stirring continuously.

Ingredients (what you need)

4 egg yolks
3 dl olive oil
1 tablespoon mustard
5 tablespoons white yogurt
1 tablespoon capers
2 tablespoons white wine vinegar
1 tablespoon dill
1 tablespoon tarragon
1 tablespoon parsley
1 tablespoon chives
1 sweet and sour cucumber
ground black pepper

Recipe steps

Two boiled yolks are mashed and mixed with two raw yolks.

We add pepper, mustard, and slowly pour in olive oil while constantly stirring.

Then we add yogurt and vinegar, stir in herbs, and finely chopped capers and cucumber.

Everything is thoroughly mixed until we obtain a smooth creamy sauce.

Serve it with cold roasted meats, fish, and salads.
