We wash the meat and cut it into smaller pieces, finely chop the onion. In a pot, we sauté the onion in lard, then add the meat. We season with salt, add spices, add water to moisten, and let it simmer until it is almost tender.
We pour the prepared mixture into jars, filling them about two-thirds to three-quarters full, close with lids with red rubber seals (which can still be purchased), and sterilize at a temperature of 100°C for 60 minutes. The next day, we repeat the sterilization process. After cooling, we store the jars in a cool place.
