1.5 kg zucchini
125 ml olive oil
4 larger onions
6-8 cloves of garlic
3 tablespoons salt
3 tablespoons sugar
2 tablespoons balsamic vinegar
400 g tomato puree
5 tablespoons Worcestershire sauce
130 g harissa (or less, to taste)
Recipe steps
Cut the zucchini into larger strips. Slice the onion and garlic into rounds.
Preheat the oven to 200 °C.
Sauté the onion and garlic in oil. Then add the zucchini and briefly sauté it for about 5 minutes. Next, add the remaining ingredients and mix everything together.
Place in the preheated oven at 200 °C and bake for 40 minutes, stirring occasionally.
Then remove and pour the hot mixture into pre-washed warm jars. Immediately seal them and turn them upside down to cool properly.
