Currant jam

Can you imagine Linzer cookies without currant jam? We certainly can't. Currants have a high pectin content, so there's no need to use any gelling agents.
Ingredients (what you need)
red currant
For 1 liter of currant juice
1 kg granulated sugar (900 g is sufficient)
Recipe steps
We boil the whole red currants including the stems for 25 minutes.
Then we thoroughly strain it through a dense cloth.
We measure the juice. For 1 liter of juice, we add 1 kilogram of granulated sugar and cook over low heat for 35 minutes.
We pour the cooked jam into jars. We carefully wipe the rims and securely seal the jars with lids.
We turn the jars upside down for 5 minutes, then we turn them back and let them cool down.
